More specifically, what is under it? What is squishing under that space in her skull? (I hope I'm not directly poking at her brain!!)

The soft spots (also called "fontanelles") are not just skin over the brain.
"Parents may worry that their infant may be more prone to injury at the fontanelles. In fact, although they may colloquially be called "soft-spots", the membrane covering the fontanelles is extremely tough and difficult to penetrate."

A soft spot is a place on the head where the bones have not fused together yet. In order to pass through the birth canal, a baby needs to have a flexible skull that fuses as the baby gets older.

Don't poke her head!!!
The squishy stuff you've described IS her skull! When a baby is born, the skull is made up of plates that are more like cartilage than bone so that it is easier for the baby to come out of the mother's womb. They don't completely fuse together into solid bone until at least a year, and you wouldn't want to do anything to disturb that!

air is under it, for the time being. the brain is a little further in.
do not push it. this wont be too good for the baby now as it will bruise easily and may cause deformity on the top of the head.

Her brain is under it. It is pretty safe but you shouldn't poke at it.
