There's a wonderful program I downloaded to record sound FXs from a particular video game. The way if works is it records the sound coming out of your speakers using the simple record, pause, play buttons and saves it as mp3.
I'm not sure of the legal issues involved with recording streaming music (remember that episode of What's Happenin' with the "Dobey" Brothers?); but that software is call Streaming Audio Studio. You can download it at www.streaming-audio.net.

Try TubeHunter which can both save Music/Audios and videos from YouTube and any other video sharing webs.
