A good ffxi party should have a variety of job classes working it. Usually a well rounded group makes the best party You should have a healer and a backup healer. Something like a white mage and a redmage or any other job that has whm or even rdm as a subjob. There are 18 jobs available now, though in the beginning you can only chose from 6. You have to unlock the other jobs if you want them when you get to level 30.
You should have someone acting as the primary tank, to take the most damage and to provoke the enemy from the other characters who can't wear the highest rated armor. Paladins and Warriors are usually used for that. The rest of your party should be damage dealers. Could be black mage, monks, or just about any job. Some hit the enemy with weapons, cast spells and still others like the bard enhance the group and depress the enemy's attibutes.
You want one of your damage dealers to pull the mob and bring it to the group so that the group can ambush it. Someone with a ranged weapon should be the puller, they can shoot the enemy and run it towards the group.
As far as the race is concerned, not quite as important though some races have better attributes for some jobs, but even so, with the right gear and equipment any race can do any job. Tarutaru make good mages since they get more mp by default than other races but they are physically the weakest. Galka get more hp and the worst mp of all. Elvaan are the strongest but get less hp than Galka, Mithra get a bit more strength than tarutaru but not quite as much mp. Humes are the jack of all trades, not especially good in hp/mp but not bad either.
The best choice for your party is going to be based on the situation and you have to chose among the players available to form a party.
