I am confused about if the stats are compiled at the end of the day or season greatly effecting how I would use bench players (substitutes day to day or only if a starter is injured).

You get points for how well you do in each category. Say you are in a ten team league and you have the most home runs, you get ten points for being in 1st in the home run category. If you were in last in the home run category, you would receive 1 point. You add up all your points from all categories to get your total score.

Ike d is right , but it also depends on how the categories are computed. It could be the total scored added up, or it could be based on how my teams have entered. Lets say 10. 10 would be the best score and 1 the worst. Each day the count is added the person with the highest number after the totals would recieve a 10, and so forth. The bottom of the page (once league has started) will show just how you scored in comparrison to the rest of the league. Roto using the same scoring has h2h but the highest overall gives the large of the point.
