Kebab is the cooking style of the meat and vegetable; rather than frying it, it is cooked in a stick above fire; Lamb, Beef, Chicken, or fish is marinated the night before; splash seasoning on it, put one piece of meat, and one piece of vegetable (Tomatoes, Onions, Green Peppers),, repeat; and let it cook to perfection; It is said to be the healthiest way of cooking since you do not fry it or add any oil to it; just natural way of cooking. Seasoned lamb, sliced thin with maybe a bit of beef. Stacked on a spinning vertical skewer, it slowly turns on a gas fired spit, and it is sliced off from the top down and is normally served with pita bread and that excellent cilantro, onion and tomato salad. Its called "doner" in Turkey, and the best I have had was from a tiny kiosk in Ankara. Get a Coke with it and enjoy it.
The sad thing is most places that serve it only have one skewer of this tasty stuff and when its gone, theres none till tomorrow.

Depends on the recipe. Basically it could be beef, lamb, chicken, or goat...finely ground up and mixed with a variety of spices then packed together and slowly roasted over a rotating spit. Great stuff!!

A mixture of beef and spices mixed to a pulp and blened together to cut and shape round spinner thingy ,theres lots of recipes for them ie bacon etc

ahhh the donkeys leg its lamb well supposed to be anyway but its the rough bits of the lamb you often find bits of bone mixed in as well play hell with your teeth well they did with mine anyway
