Kid Rock did a version of Bad Company's Feel Like Makin' Love. Kid Rock was decent at it (I guess), but doesn't even come close to Bad Company.
With the general audience, I think Guns N' Roses version of Knockin' On Heavens Door is more popular than Dylan's. To me, nobody can beat Dylan though....
Edit: And though many people seem to think that Tom Petty is the original singer of Life Is A Highway, he is not. It's a Tom Cochrane song...

It's My Life by Talk Talk totally beats the No Doubt cover.
Another is Venus, originally by Shocking Blue. The Bananarama cover is just TOO dancy/poppy/girly sounding.
I also agree that There She Goes by The La's kicks the Sixpence None The Richer version.

In my opinion, Dolly Parton's original "I Will Always Love You" from 1974 is way more heartfelt than Whitney Houston's 1992 version - but Whitney's was a much bigger hit.

I know not many people are going to agree with this, but I LOVE the Meat Puppet's version of "Lake of Fire". Nirvana's is good too, but for me, there's no comparison to the original.
