How about bands that started out so-so and got better as time went on. That would be Radiohead and the Beatles.
But to answer the question you asked, I would say the quality of U2's music has taken a nosedive lately (or maybe it's just Bono and his stupid save the world causes that is making a lot of people tire of their music).

Boyz II Men. They started out quite well and the music was excellent. But I guess when they decided to make "crossover" music, they became boring, sappy and mushy. Perfect library music. Yawn.

A whole lot. U2, the Grateful Dead, the Who, Yes, Eric Clapton, and a whole lot more. Now don't get me wrong: I love all of the above, WHEN THEY WERE GOOD. As they got down the road they lost it and started repeating themselves, or they started writing bad songs, or taking their own hype too seriously, or the original members died and they couldn't get it back together.
Very few rock bands get better or maintain the same quality over time, unfortunately. Fortunately their good work is always there with us.
