Because some materials are too hard (brittle) than other, more flexible materials. Say... a piece of wood. A dry piece of wood will break easily if not handled with care, while a still-living branch is harder to break. And metal. Paperclips bend easy, but aluminum foil, when bent constantly, may eventually fall apart. So, its really the flexibility and/or humidity of the material.
