Bhutan - I have a large replica of this one that I've hung on the walls of my various apartments ever since college. Never fails to get a reaction from visitors who haven't seen it before. Some of my other modern favorites besides Bhutan include Estonia, St. Lucia, and Sri Lanka.

A couple of historical flags that I've always thought were really cool:
The flag used by the Kingdom of Naples in the 1700s (before Italian unification) had a very distinctive emblem. You can see a picture of it at http://fotw.fivestarflags.com/images/i/it-2ss1.gif
I also like the old flag of Laos with the three-headed elephant in the middle, as seen here: http://national-flags.co.uk/world-flags/images/l/la_1952.gif
