When you write a poem, or anything...you must "write what you know," or it will not ring true.
Use your own opinions, beliefs, experiences regarding racism.
Have you ever experienced racism in your life? Have you ever seen people or heard people be racist? How did it make you feel? Use adjectives that help the reader feel what you're feeling. And remember, poems don't have to rhyme.
Off the top of my head...
"You are so white,"
He said to me...
Before that moment,
I did not see
a true difference between he and me.
I thought he was cute, and funny and witty,
I was hoping he would think me pretty,
but all he could see was my pale white face,
Suddenly it was about our race.
See it isn't so hard. You may have that as a start if you like or change it to suit your life & needs. This poem isn't finished though, tell your story, it will be great!

I've found these on the internet... maybe they ain't ideal for what you are requiring, but should give you some ideas about what prejudice means to others...
Different religions
Common beliefs
Looked at differently
Only Allah not called God
God not called Guru
Some are different
But still praying
Still holy
Looked down upon
Because of generality
by Gary R. Hess
Prejudice is not the judiciary.
Fermented and bitter wishes are perfect tablets for prejudice.
Aren't some of us found where your perceptions know not?
Do not judge in that dark lodge.
Do not lock your lodge with grudge.
Author:- Essa Bokarr SEY
Brought up in a family full of prejudice,
It's been a long climb out of the abyss.
Unlike them I don't hate Muslims,
just 'cause they have different whims,
Women were not made to cook,
Men probably altered the Good Book.
Sardars (or blondes) aren't dumb,
As a general rule of thumb.
I don't think every American
should be labeled as a Satan.
The Jewish geniuses at every turn,
Make one yearn to be a chosen one.
I could go on and on .... and on
But I won't, I'll get to the crux anon.
Now I hate people full of prejudice,
if my own is showing... excuse me pliss!

look for poems by seamus heaney, winner nobel prize for literature, that would refer to his home town of Derry. Growing up here, people have experienced prejudice and mr heaney has written about his experiences. Sorry I dont know any specifics.

There are so many lazy folk around with no imagination,
You would rather steal someone Else's ideas than have some of your own.
If you cannot be bothered , be honest and don't bother.
But their I go again, prejudiced.
