I had a dinner and a movie date tonight, and then back to her house.. well she called me earlier this morning and said that she forgot she had a Saturday class tonight and wanted to re-schedule. We agreed to go out next Friday, and she would call me on Friday to verify everything and what we were doing.
Does it sound like she's interested, or was this an excuse? How would I know if she wasn't interested?

She rescheduled, so that is a good sign. I'm sure you will call her something prior to next Friday, right? Don't wait for her to call you on Friday to see what you all are doing, call her during the week just to say hi. Pay attention to the mood of the conversation, that may help you figure out if she likes you or not.
If she tries to reschedule again, she's not interested. If she isn't interested, move on, why would you waste your time on someone who doesn't want to be with you?

I suggest you offer her a cup of coffee maybe on Tuesday....just see if she would like to meet for a quick lunch. You shouldn't worry too much except I personally, dont like to wait till the last minute to have plans with a guy I really want to get to know

The only way is to ask her and trust her. Stuff dose come up or people do forget about other arrangements when they make plans. I wouldent worry. Im sure she is into you!!!! Good luck!!!
