Adobo is the national Filipino dish. There are many different
regional versions of this dish but the basic ingredients are
meat (beef, pork and /or chicken, although I personally prefer
chicken), vinegar, crushed garlic cloves, ground pepper, and salt. Some recipes use soy sauce instead of salt, others call for a little sugar to offset the vinegar taste, and some use a little coconut milk for a creamier sauce. This is basically a meat stew. Here's my favorite recipe:
3 lbs of cut up chicken parts (legs, drumsticks, wings)
Marinade these in mixture of 1/2 cup white vinegar
5 crushed/chopped garlic
cloves
1/4 cup soy sauce
1/2 tsp salt
1/2 tsp ground pepper
for at least 1/2 hour
Then transfer everything to a pot and add two bay leaves and
1/2 cup water, just to cover chicken parts halfway. Bring to a boil and slow simmer until chicken is thoroughly cooked and tender. Remove chicken from pot and leave broth/juices in the pot and boil down to half volume. Add 2 tablespoons of coconut milk and 1/ 2 tsp sugar. Return chicken meat to pot and simmer 2 minutes . Serve warm with steamed white rice

Majority wins! Oh well... there are a lot of tasty Filipino dishes but Adobo is very common in the Phils. since it is so easy to cook it. Usually, they prepare chicken or pork adobo or the combination of the two. It is cooked in soy sauce, vinegar, garlic, & some spices like bay leaf and black peppercorns until brown. (--,)

i agree, ADOBO is the easiest. First dish i learned. Saute garlic and onions in oil. Fry chicken a little bit. Add water, soy sauce, vinegar, salt and bay leaves and optional potatoes and boiled egg. Let it boil. If you want a thick sauce, put a little cornstarch. If you want lots and lots of "sabaw", put more water!. The good part with ADOBO is that you an always add little water when your sauce starts to dry and it will taste the same. plus the longer it stays, the tastier it gets
