Hematopoiesis refers to the production of blood cells in general; erythropoiesis refers specifically to the production of red blood cells. Thrombopoiesis is platelet production; granulopoiesis is the production of granulocytes (a class of white blood cells), etc.
If you are asking about the actual process itself, the answer is very complicated and not completely understood, but the reference below will help. In general, multipotential (not fully committed to a specific cell line) stem cells are believed to give rise to the pool of proliferating and maturing blood cells found in the bone marrow. These cells then enter the peripheral blood system or are pooled (stored) for later use in the bone marrow and other locations (i.e the spleen).
