Great question. Simple answer. Longevity.
Most were simple immigrants used to hard life in their country. Some brought children into this world. Most lost the children because of the lack of nutrients. Some lost the kids due to what we know as modern medicine.
There was nothing like a vaccination or even penniclin. Men, women, children, they all died from lack of what we consider today's needs. In the West, on a Stage Coach, do you think anyone had a medicine cabinet - much less what would be in it?
It developed hearty people. Let us be grateful for that.

Technology, although a boon to food production and agriculture, started the demise of homesteaders and continues to cause the decline of the American farmer and rancher.
The rapid progression of technology spawned the need to develop larger and larger farms to offset the cost of technology and still compete in a national and international market place
