From a chemistry standpoint, its all about creating solutions. Most solids dissolve in water - its the universal solvent, so cleaning with water makes sence to dissolve food. Hot water is a better solvent than cold water, becuase the solubility of most solids increase as the temperature of the solution (water) increases. That is why hot water removes stains on clothes in the washing machine too.

First of all, hot water helps to disinfect the dishes. My guess would be that this is the primary reason for its use in dishwashers. Second, hot water makes more suds in the soapy water. This makes it more effective at washing. This might be related to the fact that many chemical processes are sped up by high temperatures.

Hot water has a lower surface tension than cold water therefore it can penetrate pores better than cold water. In addition, soap further lowers the surface tension making the hot water an even better cleanser.

This is due to the fact that microorganisms in our bodies can only grow in certain ranges. The hot temperature of the water works to kill them most of them, so they do not affect us. It will also denature many of their proteins so they can't infect us by attaching to various cells in our body. Cold water would simply cause many of these microorganisms to become dormant, and upon entering our body they would start growing rampantly again.
