That's a tough one, theres a lot of good stuff, Eyetoy play, Buzz!, Metal Gear Solid 2: Substance, Mercenaries, WWE Smackdown etc...
At the moment though I think Resident Evil 4 takes a lot of beating. Good graphics, solid game engine, great story and some genuinely worrying moments - plus some extra elements to add to the game's longevity.
