I have always paid everything before going. I booked a trip with my local travel agency. The day I booked my trip I paid for the airfare because it was a very good price and I wanted to lock in the price. I paid a small deposit on my land portion and I paid the balance in 60 days. If you book on line, you will pay for the whole trip with a credit card when you book.

hmmm, what do you mean "all inclusive" if you are making this reservation with a hotel...all inclusive means only the the hotel services, food, and drinks. and sometimes a few activities. it doesn't include the flight at all.
usually the total package vacations you are talking about are booked through a travel agent, and they should tell you what to do. or through a website, in which you give your credit card when you make the reservation and everything is charged right then.
so...your answer is either 1) you pay before you go or 2) an all inclusive hotel package does NOT include airfare.

When we go to Mexico we stay at an all inclusive and we pay at check in. We buy our flight separately which is put on a credit card.

You pay upfront the "packages", if you book on the hotel's website you are making a reservation with a deposit and pay when you get there.
