He has a girlfriend so no 3sum, and there will be a group of us, last time we had an all night poker game and that was great but want something better this time

Cook him a fabulous meal. If he is single then maybe arrange a foursome with a friend.
Take him out for a day somewhere.

make sure that he is not left of things like going to meet your friends, if he has any friends in your area arrange to met up them.
