I'll sauté an onion lightly with a leftover meat. Add eggs with smoked chipotle chile powder, cumin, pepper, salt and stir a little then let the bottom solidify. Then flip it over and add grated extra sharp cheddar with a little Parmesan and cover letting the cheese get melty. Serve folded over omelets style.
It only takes 2 minutes longer. Would it go well with a mango-mary?

It sounds really odd, but one of the first times I tried cooking scrambled eggs, the recipe called for cream cheese. I tried it and I totally loved it!

I always use cream when I scramble my eggs and cook them in butter then add lots of salt and pepper to finish. I like buttered toast and a little jam on the side. That's what I'm having as we speak. It is delicious!
