I think maybe 'Interesting' is something which catches your attention because of unique qualities it has. Like an rare artifact is 'interesting' because there aren't many like that in the world (so it's unique). A person might be interesting because they do things differently to other people... etc.
However, different people find different things interesting. So it is down to personal preference too. It is a hard question to answer.

In my opinion what is different catches your attention, if something is different from what you used to you care for it, you want to know more about it, you probe, you show interest. I'm not an authority but I think this is an area of philosophy, about senses of human. Something you think as interesting may not be by interest. Psyhology and neuroscience are positive (experiment oriented) sciences, this is a controversial issue so it must be an area of philosophy.

It's interesting when you want to understand it better, it gets your attention. This sounds like neuroscience. YOu can see what part of the brain lights up when something interests you. They do this with babies all the time, try to see what is interesting to them by seeing how long they look at something.

When the thing is similar to the nature of the person, then it is interesting to the person e.g. a physical athlete would like sports more than indoor game.

when something is interesting you are amused by...
when you are amused it turns into interesting...
also, if it makes you think then it can turn interesting...
maybe...thats just how i figure it...
