Osmosis pulls water out of the snail in an attempt to equalize the salt concentration on the inside and outside of the snail's skin. Another of the answers was right that this dehydrates the snail. This is not "boiling" even though it looks like it is bubbling. Boiling is when a substance changes phases from liquid to gas. This does not occur.

snails dont melt when they touch salt, they boil up
