While playing games such as GTA, there are long pauses while the Xbox is "loading." Sometimes the games just freeze up too and I lose any progress I make.
Can you "wear out" an Xbox?

Is this with just GTA? I had the same problem, my xbox disc lens eventually died out.

If the lens is dirty it might have a harder time reading the disc, taking longer. Try getting one of those discs that cleans the lens, or just buy a new one. They are pretty cheap, around $20-35

Some part on your xbox is probably just old and worn out

If your game is loading from a cd or dvd the disc may be dirty (often fingerprints) or the optical head that does the reading is dirty.

If the disk looks dirty (hold it to catch the light at an angle) wips it with a soft cloth going from the center out to the edge, dont wipe in circles.

To clean the head you either need a cotton bud or a cleaning cd.

A dirty disk or head will cause lots of retries in reading the disk .

the laser lens may just need cleaning, if not a replacement. the repair should cost no more than $50, but since the original xbox is no longer in production, you might be better off scouring craigslist or ebay for a new one around the same price as the repair.
