been a mechainc in a dealer for 15 years. first thing i do when i get grease on a seat is grab some windex glass cleaner and spray the effected area and scrub with a rag. The other thing that i have found that works very well is a foam carpet cleaner made by a company called ZEP, wich i have found at home depot.

you can do what they did in the old days. Get a gallon of distilled water and add lye to it. Perhaps 1 tbsp per quart and spray it on and rinse quickly. otherwise it could remove color but I think most car seat fabric are already color fast with interlocking nylon fabric blends.

This works great on grease because lye water breaks grease down to its lowest component and thats glycerine and glycerine then becomes a sugar which is much easier to clean up, I bet that GM mechanic didn't know that lol.

curtains, clothing, headlining, door trims or seats? if it's on car seats get fabric upholstry cleaner from trade factors use in carpet cleaner like a vax. if it's caused by spilt currey or milk which encourages mold to grow. use a small steam cleaner (argos £30) it's the only way to kill the bacteria and stop smell. them clean again as above. dont use bleach it'll rot the fabric. use vwp cleaner.
