It's not really an explosion, and it's not really the mentos reacting. The general explanation for this is that the coke (or whatever) has a lot of carbon dioxide (CO2) dissolved in it. The CO2 bubbles out of the Coke when you release the pressure, but it bubbles out much faster if it has a rough surface to start on. The surface of the mentos may appear smooth to your eye but in fact at the microscopic level it is quite rough and the roughness is just the right amount of roughness to encourage bubbles to form. So what happens is that the mentos allow the CO2 to bubble out really fast adn the bubbles blast the Coke out of the bottle. So, it should work about the same with different kinds of soft drinks, but it may work a little better with some than others because of the amount of CO2 or the other stuff that's mixed inthe drink.
