Virtually unlimited depending on server configurations/optimization, whether or not you have multiple servers and clustering, load balancing, and bandwidth.
If you are using Apache learn about Virtual Hosts so you can have a different website load depending on the domain name used to access the server on that IP.

I wouldn't host more than one, because of slowing down, but I think you could have an unlimited amount.
