I've noticed this particular body language in many people - what does it mean and why do we do it?

Because they are embarrassed and humbled. When someone says something very nice about you, it tends to go inward and your head falls like you trying to look inside. Isn't it nice to hear someone compliment us. After, they leave, we still think about it. We look down because we sort of agree with what they have said and to show our acceptance without replying. We don't say anything most of the time since we might be at a lost for words how to express our gratitude for their compliment.
You dont' know how to react.

The forward head tilt is a natural sign of submission. This is showing that you not only accept their compliment, but are humbled by it. It's not such a far stretch to guess that it's where the famous Japanese bow came from.

On the other hand, if someone looks up after you compliment them, be sure to revoke your statement and call them arrogant.

The modern and strong-willed man (or woman) will more than likely maintain eye contact and respond with as little as a "thank you" or as much as a warm embrace.

Be weary of those who kick a compliment back in return, for one who can not accept a genuine compliment as a moment they worked for and earned is one who will shallowly compliment anything and anyone for a quick karma-fix.

People look down and smile when they are paid a compliment because it makes them slightly uncomfortable or self conscious for a moment. They enjoy the compliment but may be a bit shy and don't really know how to accept it without being slightly uncomfortable with themselves.

mainly because they're shy and don't know how to react. Also, this way they won't seem haughty or arrogant.

because they are shy and embarrassed and probalby they dont believe it themself. deep down they are grateful that you did compliment them though

because they don't want to show there feeling's, they want to conceal it, that's why they look down because it can be seen in the eye...
