I live in Taiwan, and the official language is Mandarin Chinese, which is spoken throughout most of China. However, the characters are different, with the mainlad using "simplified" writing, and Taiwan using the standard. Many Taiwanese (especially in the rural areas) speak Taiwanese.

In Hong Kong they speak both English and Cantonese.

Thailand, they speak Thai, but English is widley used.
In order of English usage:
1. Hong Kong- English is everywhere
2. Thailand- Most people are able to help you in English
3. Taiwan- English is hard to come by

1. In Taiwan the official language is Mandarin (Chinese); however, many people outside of Taipei (the capital) will use Taiwanese and Hakka as well as other dialects. The majority of Taiwan's population can speak Mandarin.

2. Hong-Kong - they speak Cantonese.

3. Bangkok - they speak Thai.

Taiwan- Mandarin, Hoklo (taiwanese) and increasingly English. (its on signs and in Taipei most service people possess a limited amount of english.)

Hong Kong- Cantonese and English. All tourist related service people you deal with will have decent english, most business people will have some.

Bangkok- Thai and English. (English is on signs and tourist-related places generally have a reasonable amount of english, but many restaurants and businesses dont have a stitch.)
