You know, it's hard to say. Most sushi bars work differently. For example, one time I ate at the sushi bar but got drinks from the drink bar. They put my sushi on the drink tab and I asked if the tip would be split with the sushi chef, and they said no.
So I tipped the drink bar for the drinks, and walked over and tipped the sushi chef for the sushi.
Now, some might split the tips already. You just have to ask. No server or bartender will mind you asking how you're supposed to tip if it's not obvious.

Typically you don't tip the sushi chef, like the server. I always slip them $5 - $10 and get samples all night long. Servers are 20% of the bill. Doubling the tax is the cheap way to go.
