It allows you to:
- see things moving more easily against a different background color;
- judge distance;
- see that the larger of two similar objects is nearer;
- determine you are within a space, not just looking out to a flat scene.

Depth perception is wonderful and you realize it after your blinded in one eye! Like me!
Try putting a patch over one eye and then put an empty glass on the kitchen counter. Try pouring water into the empty glass while wearing the patch.
That's one example. Another good example is in a description already given like stepping off a curb.
A more realistic and dangerous description is making a left turn on a highway at night. Depth perception is gone and you can't tell how far away the oncoming lights of other vehicles are to you. It's a pretty awful feeling. And it's very dangerous!

If you cannot discern how high up you are, how would you then judge your safety from falling?

It also helps when you're digging into an apple pie! The deeper the better!
