All I know about it is that it is a modified protein, which has the desirable property of sweetness, that it can cause diarrhoea if used in excess, and that people with Obsessive Compulsive Disorder should avoid it. 3. As I understand it, Aspartame breaks down under high heat, so is useless for baking, but can be applied afterwards, by adding it to cream, or unsweetened yoghurt, & cocoa, coffee, vanilla, etc.
