thats a very broad question that will get alot of answers across a very large sepectrum of music...

those i would choose for their creative uniqueness, and how they undenialably show us how music can really be a form of art, complexity and beauty.
no normal person can pick up a guitar and whip out crazy train like randy roads did....or write some of the most unique guitar leads and play so smoothly like gilmore does.
sure you could teach a novice the opening lick to "smoke on the water" by deep purple in about 10 minutes....but try to do that with just the opening lick to "Skull beneith the skin" by Dave mustaine of megadeth. But to each their own...
i like melody and creativeness, and anyone who can play more than bar chords i tip my hat to....and anyone who can use more than 4 chords.....

Of COURSE I'm being biased here, but here are my honest answers. Rickey Medlocke (simply because he's my favorite musician), Gary Rossington, Allen Collins, Billy Gibbons, Duane Allman was great on slide guitar, Eric Clapton.... so many, but those are some of the ones I can think of off the top of my head. I also dig George Thorogood somewhat..

Duane Allman of the Allman brothers Band was the best slide guitar player. He was killed in a motorcycle accident.

Trey Anastasio. Because he plays guitar the way I hear myself playing in my head. He also looks like he's playing "air guitar" on a real guitar during shows.

I would have mentioned names like Eric Clapton and Mark Knopfler, (and there are lots of others) until I heard Rodrigo y Gabriela. Mesmerizing.
