It sounds obvious, but open with a reference to something you have in common with the other person/people. If you have a class together ask what the other person thought about last night's homework assignment or say, "So how was life beyond Molecular Biology this weekend?" You could also comment on an aspect of the other person's clothing, such as, "That's a really interesting handkerchief you have there. Is it monogrammed?" (that's if you're feeling particularly daring).

If you just plain want to talk to someone, there's always "Want some gum?" But you have to be skilled enough to somehow begin a conversation with that.

Weather is safe. Where do you work, what do you do there, do you enjoy it? Asking about the other person, with interest, is usually your best bet.
