Use the knife, it deals major damage on him. The guns do not do nearly as much damage as the knife does. To back this up, go here

That is if you find the knife tactic hard to believe. I know some people tend to not believe the knife does about 60 times more damage on him than a gun would do. But it does on him.
Oh, I just saw this and figure I should add, it works for both Gamecube and PS2 versions. I just went to the original game strategy.
