what can i do with a blank notebook/journal?

Decorate the top cover if it's plain and dreary.
Now for the contents:
journal/diary
Medical history of you or your pet
vehicle maintenance - when your oil was changed, etc
planner
vacation and sick days used
thankful journal
prayers answered journal
garden log
final wishes
home repair log
christmas card and gift log
addresses
recipes
guest book
places you've traveled & notes about them.
I use one to track how our business does year by year.

Could use it for letterboxing. This is a "sport hobby" of sorts. Go to letterboxing.org, this is a fun way to spend the day. It is a scavenger hunt of sorts, when you find a letterbox you would then stamp your journal and write a little something about where you found the box.
I am in FL, my daughter went to TX to visit a friend. She took her journal and found 3 letterboxes while in TX. She is now living in Fort Myers FL and searches for boxes that are hidden there.

Totally alter it!
Cover it with paper and photos, tiny charms, lots of doodles.
Fill it with photos - turn it into a "book of me" . Do a separate page for everything about you scrapbooking style. Include a favourites page, family page, hobbies, work, whateva.
