Alfalfa is a perenial plant. Hay fields can be planted once and then irrigated, fertilized and harvested over several seasons before replanting with fresh seed. It will be more or less dormant in cold weather and grow rapidly in spring and summer. Just let some of it grow up and remain standing in the garden thru the winter for rabbits running free. If you are talking caged rabbits. Cut it, dry it and store it in a dry area like hay for the rabbits in winter.
