The BEST present I get every spring (or end of the year), is a hand written letter by the student explaining why he or she loved my class, and how I impacted upon them.
Who needs another candle or bouquet of flowers? Hand written notes last forever! (-;

I'm a teacher. The best gifts were the cheapest in money but the richest in spirit. From the students who came up to me and said things like.
"Thank-you",
"I'll always remember you. You made a difference",
"Thank-you. You made me feel so welcomed in your class"
I'll miss your classes. You made learning fun and easy"
"You made me feel important"
Do you know how that made me feel? The best gifts ever!
When you get older you will not remember what the teacher taught you. You will remember how you felt. You will remember the really good things that happened to you. So if you have a teacher that made you feel good about yourself and your accomplishments then tell them. That is the ultimate gift.
Now, if you just want to buy a gift then go with the gift cards. It could be for a book store, a teacher type store, Wal-Marts etc. Teachers do spend a lot of their own money. Talking monitary gifts, the gift cards were the best.
P.S. I was also a sucker for chocolate and spring means Easter and Easter means chocolate bunnies. (*-*)

If the teacher's a female, then get her some flowers, preferably daisies, lilies, or sunflowers, seeing as those are "spring flowers".
If the teacher's a male, then I guess a tie or a watch.

I saw a teachers desk once where she had a cup of pens and pencils only each one had a fake flower taped to it, so it looked like a bouquet. What was nice was that fewer people stole her pens.

I could definitely use anything to help me organize the classroom, especially during spring cleaning time. Gift cards to places like WalMart, KMart, or Target would be greatly appreciated.
