I just watched the first disc of season 1 and loved it. From those 4 episodes, they don't seem to have a running plotline from one to the other. Is it safe to start watching the episodes that air weekly now in 3rd season, or should I hold off and catch up on the discs first??

You can just start now. There's some romantic coupling, but nothing earth-shaking that would require you to get the backstory from previous episodes.

You will need to know that Peter McNichol is on the space station.

you don't need to watch in order. While some elements evolve over time (relationships etc.) the main plot is a self contained story each episode. (I still haven't seen most of season one yet myself -- but enjoy the current episodes.)

if you watched the first season then you know who everyone is and what they do so, yes, you can watch and enjoy .
the storylines are not continuous.
