It's "ridge". It's where the rafters connect at the top of a gabled roof, usually connected to a perpendicular "ridge board" (running the length of the rooftop, but not if "trusses" (inner supports, common in modular houses) are used. Also, I think Amish barns do NOT have a ridge board.
A roof ridge can ALSO be where a slanted roof (such as that of a porch) meets the main house), usually resting on a ledger board (a horizontal board, affixed to the house).

I think you mean a roof ridge - the ridge of the roof is the top line of the roof which either side comes down down from. Ridge tiles are the sort of u shaped tiles running over the top of the roof.

it is attached at the very peak of the roof. when they lay the plywood down they leave a gap at the very peak. they don't put tar paper or shingles on it to leave it open to the inside of the roof. then they put the ridge vent on. it serves several purposes. one is that it allows the hot air that is made from the sun beating down on your roof all day a place to escape. you will notice that the roof eaves have small vent holes to let the air in. another reason is to allow moisture to escape. they pack the bottom of it with a black fiber material, i think it may be some kind of fiber glass. this keeps bugs from crawling into the vent. the vent also covers up the tops of the shingles. the shingle sheets are actually twice as tall as they appear because they have to have a place to be nailed into place by. the ridge covers them to make them ascetically pleasing.
