It's spelled "vegan." It's like vegetarianism, except more strict. Vegetarians don't eat meat (which may or may not include fish); vegans don't like to eat *anything* that came from an animal, such as milk or eggs.
This may be for health or religious reasons, but is often also due to humane reasons, since the animal suffers when it is killed for its meat, or when the milk/eggs are taken from it.
