I would assume under criminal law, it would be illegal however if they consented to it, that may be a complete defence (assuming it didn't cause a maim or the like). However if they didn't consent you could be charged criminally with a number of things - assault, assault with a weapon, battery, assault occasioning grievous bodily harm and so on...
Civilly there are a number of things which you could be sued for. Firstly you could be sued under the tort of assault - basically for this to be successful the plaintiff would have to prove that you intentionally (or with reckless disregard) threatened to cause harm without legal justification. Secondly you could be sued for battery - all this requires is any sort of contact - intentional or made with reckless disregard, which cause some sort of damage that's made without legal justification. Thirdly you could possibly be sued under the tort of tresspass.
Think before you act - even if it may seem funny at the time, there are plenty of serious consequences you could face.

Yes on both counts. Hitting someone with a pie may seem to be a childish prank, but according to the law the person doing the hitting has just committed "assault and battery." "Assault" is when you take a swing at someone and miss; "assault and battery" is when you make contact and actually strike someone. The person who is the recipient of the pie can press charges against you and have you arrested; they can also file a civil suit against you which they will probably win.

Unfortunately, yes, it's conidered assault and possibly battery (if you bust their nose in the process say), not to mention the civil liabilities you face. People are just too litigious anymore.

You can charge the thrower with assault. If the pie is filled with razor blades, you can charge them with attempted murder.
