I just realized that I have to take two classes worth of electives in the summer at University of Knoxville, TN in order to graduate on time. I'm not sure what I wanna take, since they are going to be in the summer, I want them easy and not too bad! what do you think?

When I was at Texas Tech many, many years ago, there was a human sexuality class that my best friend took. I was fascinated by the things she said that they discussed in class. They also had videos... She claims the grossest thing she saw was an elderly couple having sex.
One time I took an art survey class... there was some notetaking and reading involved but we spend lots of time either in the museum or playing around with different media: painting, clay, charcoal, collage.
Find something out of the box that will keep you engaged and out of a book or library for extended periods of time.

women studies courses are easy. Art history classes are interesting but a TON of memorization

It depends on what you like. Check into something fun like ballroom dance, or intro to drawing.

music, studio art, or something that you're interested in that's not in your major. You know what you like- choose something that you think you'd want to know more about.
