I'm not sure where your are located, but if it's available in your area, might I suggest US Cellular?
I've had US Cellular for about a year now. They have the best plans for the least amount of money. Free incoming, and their N&W start at 7PM. I share my minutes, and we both talk as much as we want, and can never manage to get any where close to going over our minutes. Their customer service is great also. I'm very happy with US Cellular.
On the down side, if you are looking to download ringtones, download music or other files or get on the internet, US Cellular is not your best option. They have there own internet service called Easy Edge. This is the only place you can purchase downloads. Also, they are usually the last to get the newest phones.
Of Sprint and T-Mobile, I'd have to choose T-Mobile.

I have had both Sprint and T-Mobile, but out of both I have enjoyed T-mobile the most. The only thing that Sprint has is better phones, but on the upside for T-Mobile if anything happens to your phone you will be able to get a replacement phone. With T-Mobile you have a very great customer service team, I have been with them since 2004 and never camse across a bad attitude. Sprint down fall with me was it was so expense. Don't get me wrong I enjoyed Sprint too, but I would recommend T-Mobile. Like you said they had the better plan.
Oh yeah I forgot to add they have cheap texting plans and internet plans.---------->T-Mobile

I know you said you don't want to hear about Verizon, but, please read.
As someone who has had a cell phone for 20 years I think I can say that what is todday Verizon, has the best coverage in the US.
The coverage from all the other companies pails in comparison. I have traveled all over the US and Canada and I've been out in the middle of nowhere and always had signal to make or recieve calls with Verizon. Everybody I speak with has had problems with other carriers. I'm not saying that Verizon does not have any dead zones, but from my experience there aren't that many.
Personally I don't think T-Mobile will be around much longer, I think one of the big 3 will aquire them.
If you do go with Sprint find out about dual phones that work on the Sprint & nextel networks so you get better coverage.
Good Luck.

I had Sprint. Just be prepared for dropped calls or lost connections sometimes. There are pros and cons to all. The unlimited 2 hours earlier is a nice feature though.
and BTW, Verizon, can u hear my know is a farce, sometimes I can't hear them.
Oh yeah, SPRINT CUSTOMER SERVICE
SUCKS, did u understand, HORRIBLE!!!!!
