Post several ads, and have an open house on a Saturday. Use many forms of media, Monster, CareerBuilder, Craigslist, the local papers. When people show up give them a tour, a nicely done packet on your company and what you have to offer. And then let them sign up for pre-slated interview times later in the day or during the week.
