I would like to work in Western Europe or Brazil, I have considered teaching english in either place until I can find a more stable job, any ideas for good stable fun jobs working abroad?

Brazil!! The brand of Portuguese they speak there is not the same as in Lisbon, for sure. Geographic isolation has given them a serious dialect, but you would surely be able to patch that up. And they are a hugely growing country, enormously important in South America. Any big foreign corporation doing business there needs people like you to be the "go-between", the guy in the meeting that speaks both languages, the guy that can represent the company to the population at large. And they really like to party at Carnival time. And great music. And beautiful women. Send a postcard.

If you're open to it, I would explore opportunities with the US federal government. The CIA, FBI, and the US Department of State are always looking for folks that speak very specific languages and are open to extensive travel or foreign relocation.
