I can think of two reasons.

1. To allow generals to signal troops and give them orders. There were no telephones or radios back then. Dispatching a runner could get the orders there but it was tricky. It took time and there was always the chance for the runner to be killed.

2. Morale. The sound of the trumpets could allow the soldier to have a bit of faith that the war was still winnable. It kind of ties back to the orders thing, but a soldier hearing the trumpet knew that the general was still trying to fight the battle. Thus the battle was still winnable.

I believe they were used to get the people's attention for an announcement like "get out of the way the king is coming"
