if I take out the "inners" of my exhaust do I have to "jet" the carb, or can I go without any more modifications?

The Roadstar pipes have three phases of mods. The first is just cutting the rear cone out and drilling eight 1/2 inch holes in the baffle, this doesn't need re-jetting. The second is taking an 18 inch drill bit and going through the existing holes you drilled earlier, drilling the second baffle deeper in the pipe. This can take jetting. The third phase, is to take the guts out completely, it does need re-jetting after you get done.

taking the 'inners' as u put it is the same as removing the baffles. this will turn it into a straight pipe, and as such, will be a free-er flowing pipe. now for the downsides: 1: the bike will be loud enough to be heard for at least 1/2 a mile and can make u into an instant cop magnet. 2: straight pipes will hurt street performance and it's been proven by the dyno numbers; until the bike hits at least 4000 rpm's, the engine wont 'wake up' to give it a big power boost. typical street riding is usually under 3500 rpm's.
3: and this is the big 1....u WILL need to do a rejet. taking the baffles out will basically eliminate the backpressure, and it could wind up runnin too lean.

best thing u could do is to use different slip-on's for the bike...either vance&hine's, or another manufacturer. straight pipes can wind up gettin u more trouble than their worth.

u wont get any added benifit from takin the baffles out except for: giving the cops a reason to stop u, giving more ammo for the anti-biker crowd to call for more laws against non-stock pipes, and straight pipes will hurt performance on the street from not having backpressure. and yes, u will need a rejet at the very least or the bike will run too lean.

Simply removing the baffles from your stock exhaust will not require re-jetting. However an aftermarket exhaust usually comes with a recommendation to re-jet.

You probably will have to re-jet it, and you'll probably get less power from the engine without the baffles. 4 strokes benefit from some back-pressure. You'd have to change the aircleaner too.
