It's got to be Neville: Herbology. He may be so-so at everything else, but he's kind of a Herbology savant.
However, if the Death Eaters attack and take over the school, it could be Draco, you never know.

3. Katie Bell, Healing This is doubtful but I find it interesting how much pain she endured during books 5 and 6. She gets a bloody nose by Ron, loses her blood by the twins, peeves attacks her, and she is cursed by the necklace. I wonder if the author knew a katie bell who she did not like?

hmm...not one of the trio? I'd have to agree with everyone else that Neville is perfect for herbology. JKR said Umbrige would come back! maybee she's gonna be one of the new teachers. lol
D'you realise that they need new Transfiuration, Potions, DADA teathers, a new Head of Gryffindor, and Slytherin, and a new deputy headmistress?!? Thats alot!!! That is if they even re-open.
