Hi, I want to do fun things on summer break, but my mom refuses to go NEAR a swimsuit and can't play soccer or tag with the family. What sports/game nights/activities could we do besides practicing pitching softballs?

Take her swimsuit shopping, there's a number of good ones for any age, she doesn't have to worry about being stuck in a thong. Then go to a waterpark.
Otherwise, instead of pitching her ideas for her to shoot down, ask her to come up with 10 ideas for things for you to do on summer break. Then see which ones you like.
If she's too crabby to do it, then do stuff without her.
