I was told to rub saddle oil in to it. But, if u don't have any lying round the house, Olive oil works rather well. Wear it for an hour or so after. Mines turned out quite nice.

the softening of leather happens in the tanning process. This is where chemical can be added to soften leather and occurs before the leather has been made into the product. It could also be the case that if its not a harder part of the animal- eg from the back of a large cow, that it has been through a tanning process to make it harder and less flexible.
I know that saddle soap can be used to soften leather but it is a lot of work and may not soften leather to a level you find you want.
You could try taking it to a specialist dry cleaners to soften the leather, it may cost you some cash but it may be cheaper and less energy using than literally rubbing saddle soap into it!
You could also try just wearing it over and over again, the leather will soften over time and will feel more flexable also. Though this is likely to take about ayear to be noticeably softer.
Dont whatever you do let it near water, this will make it harder.

Well bloke that frequents our local had the same problem. So he removed his jacket threw it to the floor and allowed it to be rampled for 1/2 an hour. Did the trick but a bit risky if you ask me.

Wearing it to bed would work.... it needs to be tossed around and worn in so you need to wear it or at least put it on and move around in it every day.
It won't take long before it with feel more flexible.... then you'll be more inclined to wear it out.... and before you know it, it will feel buttery soft.
