Depends what version you're running, and as with everything, the latest is best. 8.1 is what I take you are running?
Go to tools/options/messages
Then down the bottom it will have the box "automatically record convos...etc:" tick it, and then browse the directory, where you want to save them. Create a new folder in "My Documents" Name it chat logs, and then save them there.
I reccomend getting MSN plus! (search for it) it has a really good logging system, among many other things, and is just and add-on intergrated into the messenger itself. It also offers the option of chat log encryption etc: etc:
